Homemade Oat Bars



These are sooooo good!

Really.

So good.  When I can get my picky seven year old to ask me to make something twice I consider that a win.  Mix these up for a quick snack or breakfast on the go.  I promise you'll never want to buy granola bars from the store again!  You can change this up by trying different kinds of protein powder, leaving out the cocoa, or different chocolate chips.  I've tried a few versions but this one is our favorite!

Oat Bars

  • 2 C. Rice Krispies
  • 4 C. Oats
  • 1/2 C. butter
  • 1/2 C. honey
  • 2/3 C. brown sugar
  • 2 t. vanilla
  • 1 scoop protein powder
  • 1 t. cocoa
  • 1 C. white chocolate chips
Combine rice krispies and oats in a large mixing bowl.  Spray 9X13 pan with cooking spray or line with parchment paper.  Combine butter, honey and brown sugar in saucepan.  Cook on medium heat, stirring constantly until mixture starts to bubble.  Add in vanilla.  Stir in protein powder and cocoa.  Stir until incorporated.  Pour mixture over krispies and oats.  Stir to combine.  Press into pan.  I like to use the smooth side of a meat mallet to pound it and press it down.  Sprinkle chocolate chips on top and press them in.  Let cool completely and cut into bars.  Wrap individually in parchment paper or plastic wrap and store in a cool dry place.
